Drying

The harvest and drying of plums are done simultaneously. The company has more than 20 natural- gas ovens for drying which work with indirect fire. This method prevents fruit contamination and guarantees that the fruit does not suffer any damage in aspect, texture and flavour.

DRYING in ovens starts by putting the fruits on wooden raisin trays piled up on iron trolleys. Then, they are taken to some tunnels for 20 hours approximately. After obtaining the product perfectly dehydrated, the fruit is taken to 500 kilogram containers that are perfectly identified with its origin. These containers are taken to a roofed over and closed warehouse, where they are protected from the sun and rain until they are processed for their selling.
